Lamb is a domestic sheep under one year of age. Lamb meat is very tender, due to the young age of the animal, and it has a very distinctive flavor which lacks the gaminess of meat from older sheep. This week, Executive Chef Dwight Hawkins uses 2 cuts of lamb for his signature dish. First, a lamb chop. Lamb chops are cuts of lamb which are made by cutting at an angle perpendicular to the spine. The best chops come from the loin, rib, and sirloin. The second, is a lamb shank. A meat shank or shin is the portion of meat around the tibia of the animal, the leg bone beneath the knee.
