The Duroc is an American breed of hog dating back to the 1830s. This heritage pork finds its roots in Europe. The Duroc hog is best known for displaying great marbling, rich color, high moisture content and an exceptional taste. Duroc is also known as the Black Angus of pork and is raised in a sustainable manner. This particular cut includes pork belly, which is most commonly cured and smoked for bacon. For this signature dish, Executive Chef Michael Beard rubs the freshly butchered pork with a complex mixture of seasonings, then slow roasts the meat to create a spectacular porchetta Panini.
