Risotto
Risotto is a class of Italian dishes of rice cooked in broth to a creamy consistency. A high-starch, round medium- or short- grain rice is usually used to make risotto. Such rices have the ability to absorb liquids and to release starch. The principal variety used in Italy is Arborio. Risotto can be made using many kinds of vegetables, meats, fish, seafood and legumes…along with different types of wines and cheeses. In the Kitchen” this week, Chef Thomas creates a “Southwest” version for his signature dish.
