The Frico (A Cheese Crisp) Basically fried cheese, frico is a main staple in the Friuli region of Italy, and the home of Lidia Bastianich. The people in this northeast region of the country were of modest means and many times struggled to survive. The cuisine that evolved was simplistic, hardy and yet, flavorful. While the farmers of the area add potatoes and onions known as frico con patate, the variations are endless.

Executive Chef, Dan Swinney, celebrates the foods from Lidia's Italian village with a Montasio Cheese Crisp filled with Potatoes, Leeks and Maine Lobster. He tops this signature dish with Mixed Greens and House-Made Pickled Vegetables, "In the Kitchen with Bonnie" at Lidia's - Kansas City.
